According to the American Chemical Society, the secret is found in the roughly 150 volatile organic compounds that breakdown during the cooking process.
They create the bacon’s meaty aroma.
Many of them are hydrocarbons and aldehydes with some nitrogen-containing compounds thrown in for good measure to make the bacony goodness.
