Healthy, delicious sweet potatoes for Thanksgiving
OKLAHOMA CITY – This fabulous method of preparing sweet potatoes involves no butter, brown sugar or marshmallow. It is easy to do; the result is both healthy and outstanding!
Serves 6-8. Recipe may be multiplied.
2.5 lbs Sweet Potatoes
2 T Olive Oil
2 T honey
1.5 t fresh lemon juice
1/2 t salt
1/2 t ground Ginger
1/2 t ground Nutmeg
Preheat oven to 350. Peel Sweet Potatoes and slice into roughly 1″ pieces. In a bowl, whisk together remaining ingredients until thoroughly blended.
Place cut Sweet Potatoes into a 9″x13″ roasting pan – drizzle glaze over. Toss thoroughly to coat. Place in oven and roast roughly 1 hour or until done, stirring with spatula every 15 minutes. Sprinkle with ground pepper and additional salt, if desired.
