Cooking with Kyle: Easy, inexpensive, quick recipe for chocolate mint candy

OKLAHOMA CITY – This is an exceptionally easy, inexpensive and quick recipe with spectacular results! Perfect for gifts or holiday gatherings, it may be done either on the stovetop or in the microwave.

Homemade Chocolate Mint Candy

12 squares Chocolate Almond Bark

6 squares Vanilla Almond Bark

6 t Peppermint Extract

Few drops green food coloring

(Optional: crushed peppermints, candies or nuts for texture)

Line cookie sheet or bakery sheet with waxed paper.

Divide white and dark bark into 2 bowls or saucepans.

For stovetop: melt barks over low/medium low heat until smooth and melted, stirring occasionally.

For microwave: place each bowl of bark in microwave and cook on high power for 60 seconds. Stir, repeat process in 20 second intervals until smooth and melted.

Add 3 t Peppermint Extract to Chocolate Bark; stir to blend thoroughly.

Add 3 t Peppermint Extract to Vanilla Bark; tie to blend, then add a few drops of Green food coloring.

Stir until blended and bark is a nice Mint Green.

Using flat spatula, evenly spread Chocolate Bark on wax paper.

Drizzle or drop green Vanilla Bark on top of Chocolate Bark.

Using a meat thermometer or bamboo skewer, drag through candy to create a marbleized effect.

Allow to harden for an hour or so; break into pieces.

(If you prefer uniform pieces, score with plastic knife as bark is hardening, but before totally firm.)
