Cooking with Kyle: Gingerbread treats for the holidays
OKLAHOMA CITY – This gingerbread is a holiday staple for me. It is adaptable as a fantastic dessert, makes great gifts as a loaf or dunking sticks and I love muffins from this recipe for breakfast! It’s easy, quick and delicious.
1/2 C sugar
1 C molasses
2 1/2 C flour
1 1/2 t baking soda
2 t ground cinnamon
2 t ground ginger
1 t ground clove
1/2 t salt
1 C fresh orange juice, warmed
1 C Craisins
3/4 C chopped nuts
Cream together butter and sugar. Whisk in egg, molasses and applesauce. In separate bowl, sift together dry ingredients. Add dry ingredients to wet mixture. Whisk in Orange juice.
Grease and lightly flour 9″x9″ pan, two small loaf pans, or 12 mini muffin tins.ً (get creative – just grease and flour what you intend to use)
Bake at 350 until knife inserted in center comes clean. Cake is 45min- 1 hour, Muffins 10-15 minutes, breads 30-45 minutes
Serve with Chantilly Cream, sweetened Cream Cheese, Butter, Hard Sauce, Sour Cream sweetened with a touch of sugar, or as I do, plain.
