Cooking with Kyle: Orange holiday cookies

OKLAHOMA CITY – These orange cookies are an easy and fantastic holiday treat. The kids can also help ice the finished product.

This recipe yields about 42 cookies and may be doubled.

3 C flour
1/2 t baking soda
1/2 t salt
1/2 C butter, room temperature
2 eggs, beaten
1 C sugar
1 C Orange marmalade

Icing:
3 C confectioners sugar (powdered)
1 t lemon juice
1/4 C orange juice
2 t grated orange zest
1 t grated lemon zest
1/8 t ground ginger
1/8 t ground Allspice
3 T butter, room temperature
Additional orange/lemon zest for garnish (optional)

Cookies:
Preheat oven to 300 degrees
Butter or oil cookie sheets
In a bowl, sift together dry ingredients.
In a mixing bowl, cream together butter and sugar until fluffy and light. Add egg and beat.
Add marmalade and dry ingredients; mix until thoroughly combined. Roll into 2 T balls and place on cookie sheet. If a less uniform look is desired, drop by roughly 2 T on cookie sheet. Bake for 20 minutes or until golden.
Remove from oven. Allow to cool completely before icing.

Icing:
In a small bowl, combine grated orange and lemon zest, orange juice, lemon juice, ginger and Allspice. Set aside.
In a mixing bowl, cream together 1 C confectioners sugar and butter. Add additional confectioners sugar and juice/zest mixture. Beat until creamy and smooth.
Ice completely cooled cookies using small spatula or butter knife. Immediately garnish with additional zest, if desired. Leave uncovered until top of icing dries/hardens to touch.
