Cooking with Kyle: Holiday brunch cake

OKLAHOMA CITY – If you’re looking for the perfect last-minute gift or a quick breakfast on Christmas morning, this brunch cake includes ingredients that are already in your cabinet.

Sift together in a mixing bowl:
2 C flour
1 1/4 C sugar
3 t baking powder
Pinch salt
2 pinches Nutmeg
Add:
1 egg
1 t vanilla extract
1 1/4 C milk (or even better – Eggnog)
Blend thoroughly, but don’t overmix. Pour batter into lightly greased 9×13 inch pan.

In a bowl, toss together:
3/4 C brown sugar
2 t ground Cinnamon
Sprinkle over top of cake batter
If desired, sprinkle 1 C chopped walnuts or pecans over brown sugar/cinnamon mixture.

Melt 1/2 stick (1/4C) butter.
Drizzle evenly over brown sugar/nuts

Preheat oven to 350 degrees and place pan in oven for 30 minutes. Serve warm, may be reheated or even microwaved to reheat at medium power.
