OKLAHOMA CITY, OKLAHOMA -- The back of a trailer is the last place you might look for a truck driver like Chris Cornish.
But this is where he and his wife Nicole spend more of their weekends making sandwiches like their Ultimate Smoked Hot.
Chris shows us how he makes it.
"The hot link goes on top," he says placing sliced sausages on chopped beef frying on the grill. "Then I put my swiss cheese on here. My sauce on there."
"Every sandwich is served with the meat piled high," he says. "We also put a little cole slaw on and more sauce."
Their food truck dream started in with back yard barbecues where Chris cooked the same recipes his grandmother taught him.
Gatherings where he served his Jerked Chicken turned into small catering gigs which bought the trailer they cook in now.
"Everyone wants to come over and eat good barbecue," says Chris, "and everyone was always like, 'did you make enough?' I was like, 'yeah. there's plenty. we made enough.'"
He pulls magic from his smoker. The Cornish Smokehouse menu offers big ribs.
Chris says, "We call these baby dinosaur legs."
They also offer specially made hot links.
"Hottest in town, they tell me," smiles Cornish.
Peach cobbler and something called the Smokehouse Yummy make sure no one ever walks away hungry.
Nicole describes the recipe.
"Graham cracker crust, cream cheese icing, vanilla and chocolate pudding, a layer of cool whip sprinkled with toasted pecans."
The Cornish Smokehouse was one of the first food truck operations invited to Oklahoma City's first permanent food truck party.
The Bleu Garten offers a revolving menu of different trucks and secret recipes.
The Cornish's are riding the city's food truck wave as far as it will take them.
"It seems like a great time to have a food truck in Oklahoma City," says Nicole. "It's really growing."
Wherever people gather someone is bound to get hungry, and in this town a truck or trailer will follow, hopefully, with something like the Chopped Hot ready to serve.
The Bleu Garten food truck park is located near 10th and Hudson in the MidTown district of Oklahoma City.
