Here is an easy recipe packed with freshness and perfect for this summer heat! Even better, you don't have to use an oven or stove, it has zero fat, and it's refreshing and nutritious!
- 6 cups diced, seedless watermelon
- 2 medium or 3 Roma Tomatoes, Puréed.
- 1 cucumber, seeded and peeled
- 1 small jalapeño, seeded and chopped
- 1/4 cup chopped red onion
- Juice of one lemon
- 3 T chopped Mint
- 1/4 cup red wine vinegar
- 2 T Olive Oil
- 1/2 t Kosher salt
- 1/4 t black pepper
In blender or food processor, purée tomato, 1/2 watermelon and jalapeño. Add vinegar and olive oil - pulse. Add lemon, mint, salt/pepper. Purée. Add remaining chopped melon. Chill and serve in chilled bowls. May garnish with additional mint, lemon wedges, cucumber slices, feta - any combination of these. The flavor will improve after being allowed to sit for a few hours.
