OKLAHOMA CITY - This recipe was provided to Kyle by a close friend. He enjoyed it so much it ended up on the Kyle's 1025 menu, where it became a favorite among guests. Kyle loves it for sandwiches - both hot and cold. It will keep for a week in the refrigerator.
The following recipe serves 8 generously, 12 if made in casserole dish.
Kyle's 1025 Meatloaf Recipe
- 2.5 lbs lean ground beef
- 1 sleeve saltine crackers, crushed
- 1 envelope onion soup mix
- 1 t garlic powder
- 1/2 t black pepper
- 1 can (6oz) tomato paste
- 1 can (8oz) tomato sauce
- 2 T Worcestershire
- 2 T prepared mustard
- 1 large or 2 medium eggs
- 1 green bell pepper, seeded and chopped
- 1/2-1 small onion, chopped (to equal amount of chopped pepper)
- Ketchup to cover
Preheat oven to 350. In a large bowl, combine dry ingredients and toss. Add tomato paste and sauce, mustard and Worcestershire. Mix thoroughly. Add onion, pepper and raw egg. Mix thoroughly again. Add ground beef and fold/mix until evenly blended. Place in loaf pan or casserole dish (9x13) and firmly pack. Place Meatloaf in preheated oven for 45 minutes. Remove and coat top with ketchup. Return to oven for 15-20 minutes to glaze Ketchup.
