ENID, OKLAHOMA -- Okay. So it's not the best possible day to run a food truck in downtown Enid.
It's a little rainy.
The Enid Event Center has a chili cook off running across the street.
But Jim Lind is still hustling outside his trailer in an alley near the ball park.
He works social media, and brings food to customers' cars.
Jimmy Fatz, as his customers have come to know him, is truly in his element.
A first time visitor asks, "You've always like to eat or have you always liked to cook?"
"Both," smiles Jimmy. "I started off in a divorced family. I spent a lot of time at my grandmother's and she taught me how to cook."
He grew up on his grandmother's home recipes.
He married a Korean girl.
Most of his crew is from Hawaii.
Jimmy worked construction jobs for years.
He had a popular hamburger spot in town for a few years until fire took that business.
"Are you having a better time now than you did in those other jobs," asks the visitor?
"Yeah," agrees Jimmy. "This is the most fun I've had, in fact."
Through it all food stayed at the center of his life.
So two years ago he bought this trailer and started working on it.
A few months ago Jimmy Fatz parked here for the first time and it didn't take long for people to start dropping by.
If you're a first time customer Jimmy likes to give out free samples he calls 'meat shots'.
I your response to his fusion of international and home cooked cuisine doesn't fit the abbreviation OMGSYM then something is wrong.
"It's Oh My Goodness Shut Your Mouth, or Oh Man. Git Sum Yummy Munchies. Some people say Oh My Goodness. Slap Your Mama," says Lind. "I would never slap my mama but I would shut my mouth around this food any day."
He's had other jobs but this one is his absolute favorite.
Come rain or shine Jimmy Fatz is still in his element.
Slinging hash and saying thanks to every customer who's willing to try something on the menu.
Most of them, he says, will be back for more.
Jimmy's Food truck has changed locations in Enid. They moved to a new food truck court next to the Leonardo's Discovery Warehouse.
