OKLAHOMA CITY--Chef Kyle Anderson is sharing an easy peach salsa that is perfect this time of year!
Enjoy it as a side-dish during these summer months!
Fresh Peach Salsa
1.5 lbs fresh peaches, diced (I leave the skin on)
1 lb fresh tomatoes, seeded and diced
1 large red bell pepper, seeded and diced
1 medium red onion, diced
1/2 bunch Cilantro, chopped
1-2 jalapeno pepper(s) seeded and diced
2 T fresh lime juice
1/4 t ground chili powder
1 t salt (or to taste)
In a small bowl, whisk together lime juice, salt and chili powder. In a large bowl, toss together remaining ingredients. Add lime juice to mixture, toss thoroughly, allow to sit for a few hours under refrigeration (if you can stand it) and serve.
