Cooking with Kyle: Pumpkin pancakes with apple raisin glaze

OKLAHOMA CITY – Now that fall is in the air, it seems that pumpkin flavoring has taken over the grocery stores. Why not bring that taste of fall into your kitchen with this delicious breakfast recipe?

For Glaze:
2 Granny Smith Apples
1/2 stick (4T) Butter
2 C Water
1 C Brown Sugar
1t Vanilla
2 t Cinnamon
2/3-3/4 C Raisins
1/4 C Brandy (optional)
Peel, core and chop apples

In a skillet or large pan, melt butter. Add apple and cook roughly 5 minutes over medium heat. Add water, sugar, cinnamon, vanilla and raisins to pan; mix thoroughly and bring to heavy simmer. Cook until liquid is reduced and thickened. (Stir in optional Brandy and continue cooking 5 min.) Allow to cool slightly before serving.

Pumpkin Pancakes:
2 C Flour
2 t Pumpkin Pie Spice (or 1 t cinnamon, 1/2t Ginger, 1/2 t Allspice & 1/2 t Nutmeg)
4 t Baking Powder
1 t salt
1.5 C milk
1 C cooked Pumpkin
4 eggs, lightly beaten
1/2 stick (4T) butter, melted

Mix together dry ingredients. In separate bowl, lightly whisk eggs. Add milk, pumpkin and butter, mixing thoroughly. Add dry ingredients and mix.

On preheated medium-high, greased or no -stick skillet, ladle batter and cook. This mixture cooks like regular pancakes; the pancakes are thicker, “fluffier” type.
