Salads are great for your health, and they can also be great for your wallet.

This carrot, raisin and pineapple salad is similar to one that is sold at a fast-food chain, but it is easy to make yourself.

  • 4.5 cups of fresh grated carrots.
  • 1.8 oz can crushed, unsweetened pineapple
  • 1 cup raisins
  • 1/2 cup sugar
  • 1 tbsp of lemon juice
  • 1/2 cup of mayo
  • 1 Granny Smith apple, chopped

In a large bowl, mix the pineapple, sugar and lemon juice. Stir until sugar is dissolved. Add mayo, blend thoroughly and add remaining ingredients. It is best to pre-chill ingredients and the salad should be served cold.

Will keep under refrigeration for three to four days.
