Avocado Grapefruit Salad with Honey Citrus Dressing
2 Ruby Red Grapefruits, peeled and sectioned
2 Avocados, cored, peeled and diced
1/4 C chopped Red Onion
Leaf Lettuce or Spring Mix (as bed - roughly 3-4 cups
4 T fresh Lime juice
1/2 C Orange juice
3 T Honey
1/3 C Olive Oil
Tiny pinch ground Cumin
Black Pepper and Salt to taste (optional)
Whisk together Lime juice and Honey until Honey begins to dissolve into juice. Add Orange juice, Cumin and whisk again. Slowly add Olive Oil while whisking. Dressing may be made 24 hours in advance.
Place Grapefruit sections and diced Avocado over lettuce. If desired, integrate chicken or fish. Top with red onion and drizzle with dressing. Serves 4.
