OKLAHOMA CITY – You’re probably in a time crunch with the kids heading back to school.
Breakfast is often skipped entirely, or includes pre-packaged items or a drive-thru. With a little prep-work, these easy Breakfast Burritos can be made in the microwave in less than 3 minutes – much faster than a drive-thru and healthier than packaged treats.
1lb Sausage.
1/2 medium onion, chopped
1 bell pepper, chopped
1 8oz package shredded cheese
1 package 6″ flour tortillas
Eggs
Salsa
Cut fresh fruit or melon
1 6oz container light vanilla yogurt (+1T honey, if desired)
In a skillet, crumble and cook sausage over medium-high heat. Drain grease, and add chopped onion/pepper. Saute until soft. (Note – onion/pepper may be cooked separately and stored separately for picky eaters) Store covered in refrigerator. Will keep for a week.
Cut desired fruit/berries/melon into bite-sized chunks. Cover and refrigerate.
In a microwaveable bowl (I like a rimmed soup bowl) whisk together 2 eggs and 1 T water. Add roughly 2 T sausage/onion/pepper mixture. Place in microwave on high power for 1 minute. Stir. Return to microwave for 45 seconds- 1 minute.
Liquid around sides and in center will have been absorbed and eggs will resemble an omelette. Remove from microwave; immediately cover egg mixture with desired shredded cheese. Place 2 flour tortillas on a plate in microwave. Cook for 15-20 seconds on high power. Cut egg mixture in half, placing each half in warmed tortilla.
Serve with salsa, cut fruit and a dollop of yogurt.
