When you are going to a summer party, it's always best to bring a simple and delicious dish to share.
This quick, easy and inexpensive salad is a summer favorite and is loaded with vitamins. It compliments grilled beef, chicken, pork and fish.
What you will need:
3 large cucumbers, thin sliced
3 large tomatoes, seeded and chopped
1 red onion, peeled and chopped
1/2 cup white vinegar
1/4 cup sugar
3/4 cup water
2 teaspoons salt
1 teaspoon black pepper
1/4 cup canola or vegetable oil.
Combine vinegar, sugar, water, salt and pepper in bowl. Whisk until sugar is dissolved. Slowly add oil while whisking.
Add vegetables and toss thoroughly. Cover and refrigerate at least 4 hours before serving, tossing again before serving.
