This is an easy, hearty, one-dish dinner. Prep may be done in advance; throw it in the oven or slow-cooker and enjoy!
Recipe:
2lbs Italian Sausage or Bratwurst, sliced into thirds
New Potatoes (may use regular) – 1.5-2 lbs, cut into small chunks
1 Bell Pepper, coarsely chopped
1 small or medium White Onion, coarsely chopped
1 28oz can Crushed Tomatoes
1 t Dried Basil or 2 T fresh, chopped Basil
2 cloves Garlic, minced
1/4 t salt, 1/2 t pepper
Optional:
1 Yellow or Zucchini Squash, sliced
1/2 head Cabbage, coarse chopped or cut into small wedges
In a skillet, lightly sauté sausage/Bratwurst until browned. Place in bottom of baking dish or slow cooker.
Surround sausage/Bratwurst with potatoes. Scatter onion, garlic and pepper over sausage/potato mixture.
If adding squash or cabbage, place on top of onion/pepper.
Stir salt/pepper/basil into tomato mixture, and pour over top of baking dish. Cover tightly.
Preheat oven to 350. Bake covered for one hour, or until potatoes are tender. Remove cover and bake an additional 15 minutes.
If you are using a slow cooker, cook on low heat roughly 8 hours.
