Chef Derek Nettle from Venue 104 Bistro and Catering stopped by NewsChannel4 to share his yummy ‘Tortilla Soup’ recipe.

Tortilla Soup – recipe


1 tbsp butter
1 to 2 large garlic cloves, peeled
1 small jalapeno pepper, trimmed and seeded
16 oz fresh salsa or favorite store brand
1-16 oz. can great northern beans, drain and rinsed
2 cups shredded cheddar cheese
2 to 3 teaspoons ground cumin
2 quarts chicken stock
kosher salt and freshly ground black pepper
½ cup chopped green onions
1/4 cup chopped fresh cilantro leaves
½ rotisserie chicken, shredded, boned, and skinned

corn tortillas
ripe avocado
Queso Fresca cheese
wedge of lime


Mince garlic. Place butter into 5 quart stock pot and heat on medium till melted add garlic, jalapeno and cook till lightly golden then add chicken and stir. Start adding your chicken stock, salsa, & cumin. Allow to come to boil then just add all other ingredients turn down heat and allow to simmer for 10 minutes.  Salt and pepper to taste.
